Have a Happy New Year!

I can't believe it's the end of 2010. I think I think that way every single year!!! It's really gone by fast. I'll be up  P A R T Y I N G...not...I'll be up and working instead. I'm just starting to feel a little better, too. I got sick immediately visiting families that had little ones with colds. Plus staying up late didn't help either! And to think I usually don't get sick when I'm working. HAHAHA...Time for a little rest then I'll off to work.

I love eating Thai Papaya Salad, so I thought I would try out the Atchara! Atchara Bison Burger sound great, but I haven't tried it out yet. I would have to substitute the bison with ground turkey. I wonder if the recipe would work with turkey! I never had bison before.
  • 1 pound grass-fed bison
  • 1 tablespoon coconut oil, melted
  • 2 teaspoons finely minced garlic
  • 1 egg
  • 1 teaspoon salt
  • dash of pepper
  • 1 tablespoon Atchara (or to taste)
  • 2 teaspoons (or less) coconut oil, for frying
  • 4 - 5 whole wheat buns
  • toppings (ex: sliced tomatoes, guacamole, sliced avocado, sliced onions, etc.)
Atchara is a traditional Philippine fermented dish made with unripe raw green papaya, fresh raw ginger root, and other raw ingredients in a vinegar base. While most of the atchara available in the Philippines is made with distilled vinegar, Tropical Traditions decided to develop its own raw vinegar which is fermented from coconut water. This is truly a raw and "live" food that has NOT been pasteurized. As kimchi is to the Koreans, chutney to the Indians, and sauerkraut is to the Germans, so atchara is a traditional fermented dish valued in Philippine culture.

Have a Very Merry Christmas!

We made gingerbread house with regular graham crackers and homemade frosting. It tasted a lot better than the store brought one that we brought and made last year. (Last year was actually our first time doing the house.) We found some gingerbread man that was made out of marshmallows! The snowman was made from 3 little white marshmallows with food gels for the face and button :D



Can't have sweet memories without the kids....so there they are!

HAVE A SAFE AND WONDERFUL HOLIDAYS. I'm heading down to see my folks and also the IL. It's snowing/raining but not icy. That goodness. Safe travel everyone!

The wind chill here is 17 degrees and a little slippery. It had been drizzling and had cause delays last night. I'm sure today, too, but school is not closed. Keep warm out there!

It looks like I haven't been good about blogging lately. I'll take the pictures and ending up not getting it into the post! All I want to do is relax in front of the TV. I like recording it into the DVR and playing it back when I get a chance to see it. I'm a TV addict. I also started reading the Twilight series and trying to organize all my digital pictures. I have so many duplicates and some missing...Not to mentions pictures that I developed and are still in the envelopes! Everything seems to be piling up.

At least I can say that I've done my Christmas shopping and have them all wrapped up. Checked!
